Gluten-Free, grain-free banana bread

Cook time: Approx. 45 minutes
Ingredients:
• 3 overripe medium sized bananas
• 3 eggs
• 1/2 cup maple syrup (or sugar of your choice)
• 2 tbps melted coconut oil
• 2 tbsp vanilla extract
• 2 tbsp ground cinnamon
• 1 1/2 cups Cassava Flour (or flour of your choice)
• 1 tsp baking soda
• 1/2 tbsp himalayan salt or sea salt
• Walnuts (optional)
Instructions:
Pre-heat the oven to 350 degrees.
Start by mashing the bananas in a bowl. Add in eggs and make sure they are mixed well. Then add in maple syrup, vanilla and coconut oil.
In a separate bowl mix together the dry ingredients: Flour, baking soda, cinnamon and salt.
Pour in the dry ingredients slowly into the wet ingredient and make sure to stir while pouring. Mixture will be pretty thick. I then added in walnuts and broke them into small pieces while I was putting them into the mixture.
Pour into a parchment lined loaf pan. Sprinkle walnuts on top.
Bake for approx. 45 minutes or until fully cooked. Check by putting a fork or toothpick into bread and if it comes out clean then your bread is ready! Let cool for 5-10 minutes and enjoy! I added some ghee butter to my banana bread and it was delicious. Perfect for breakfast or dessert!
